Chicken Abalone

This is a recipe my Dad has been making since I can remember. My mother is VERY spoiled when it comes to cooking. My Dad is a MASTER in the kitchen. He some how makes scrambled eggs taste gourmet. We have all tried to replicate them but just cant seem to get them right! I have followed his instructions step by step, with no avail. He has a gift and that cannot be learned! LOL

Whenever my Dad is cooking I will watch over his shoulder and try to learn every recipe because they are all so good. I have this one pretty much down and it happens to be one of my hub's faves. I hope you give it a try because it is SO yummy!

Chicken breast
garlic powder

Wash and pat dry thinly sliced turkey breasts

Cover with saran wrap and pound both sides until fairly thin.

Prepare a dish with flour, salt, pepper and a little garlic powder.
Scramble an egg in a separate dish

Get your pan warm and add about 2T of EVOO and 2T butter.

Coat chicken in flour and then egg

Place chicken in hot pan and cook for about 5 minutes on each side. It does not take long to cook, so make sure you watch it.

Remove from pan. Using all the yummy goodness left in the pan, add a little more butter and squeeze an entire lemon into pan and add capers. When that's nice and hot drizzle the lemon butter sauce over the top of the chicken.

And that's it! So simple but SO delicious!!
