3 St. Patty's Day Meals!

(Pasta is a lot "greener: then it looks in the Pic)
In honor of St. Patrick's day I have decided to make some fun dinners/lunches with lots of green involved. So over the next 5 days I will share with you all of my recipes. : )

So for Tonight I decided to make a Creamy pesto pasta with LOTS of Spinach!! MMMmmm It turned out so yummy.

While My pasta was boiling away, I got started on the Pesto (Make extra to use in other recipes, like on sandwiches, YUMMMM)

Pesto Recipe:
(Serving Size: 1 Cup)
2 cups fresh Basil
1/2 cup grated Parmesan
1/2 Cup olive oil
1/3 Cup pine nuts(I left this out because I forgot to buy them, tasted just fine)
3 medium garlic cloves
Salt and Pepper to taste
Ingredients:
Pasta
Turkey Burger
Spinach
Pesto
Parmesan
Cream
S+P
I combine all of this in my bullet but I'm sure a regular old blender would work just fine.

Now once that is finished, brown up a half pack of turkey burger and add a little of the pesto to it. I tossed the fresh spinach into the steamer for a couple minutes before adding to the pasta and sauce. I used about 2 cups, it REALLY shrinks up when it's cooked.

When the pasta and turkey burger is done add them together with about 1/2 a cup of pesto, 1/2 a cup of cream and the spinach. Simmer until thickened and add 1/2 a cup of parm. Add a little salt if you think it needs it and that's it!! SOO yummy. This is my husbands new fave!!! ; )
